Caramel Apple Cheesecake Bars combine the creaminess of cheesecake with the comforting flavors of spiced apples and buttery streusel. For the Crust:

  • 2 cups graham cracker crumbs

  • 1/2 cup unsalted butter, melted

  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 16 oz (450 g) cream cheese, softened

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

For the Apple Layer:

  • 2 medium apples, peeled and finely chopped

  • 2 tbsp granulated sugar

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

For the Streusel Topping:

  • 1/2 cup all-purpose flour

  • 1/2 cup packed brown sugar

  • 1/4 cup unsalted butter, softened

  • 1/2 tsp ground cinnamon

For Serving:

  • Caramel sauce, for drizzling


Instructions

Step 1: Prepare the Pan and Oven

Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper. This makes it easier to lift the bars out later for cleaner slicing.

Step 2: Make the Crust

Combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the prepared pan. Bake for 8–10 minutes until lightly golden, then let it cool while you prepare the filling.

Step 3: Mix the Cheesecake Filling

In a mixing bowl, beat the cream cheese with sugar until smooth. Add the eggs one at a time, then stir in vanilla. Spread this mixture evenly over the cooled crust.

Step 4: Prepare the Apple Layer

Toss the diced apples with brown sugar, cinnamon, and nutmeg. Evenly distribute them over the cheesecake filling.

Step 5: Add the Streusel Topping

In another bowl, combine flour, brown sugar, butter, and cinnamon. Use a fork or pastry cutter to mix until crumbly. Sprinkle this mixture evenly over the apples.

Step 6: Bake the Bars

Bake for 30–35 minutes, or until the cheesecake layer is set in the center. Let the bars cool completely before moving to the next step.

Step 7: Finish with Caramel

Once cooled, drizzle with caramel sauce before slicing into squares.

Notes

  • Use tart apples (like Granny Smith) for the best flavor balance with the caramel.

  • For cleaner cuts, chill bars overnight and slice with a sharp knife.

  • Store leftovers covered in the fridge for up to 4 days.

  • Can be made ahead—great for parties and holidays.
